Filleting Knife Various 24cm Made Of Shirogami Steel Natural-Chrome Tojiro

The Various Filleting Knife is a long Japanese knife that will make the creation of sushi and sashimi a delight. Its short, long blade is ideal for cutting raw fish and other foods with a continuous motion, always maintaining their freshness and integrity.
Tojiro used "Shirogami" steel as the core of the knife's blade, one of the hardest steels in the world, and forged it with layers of iron. Tojiro's craftsmen are knowledgeable about the temperature required to achieve maximum hardness and the optimal sharpening angle for the best blade edge, and you will understand this as soon as you hold it in your hands. Shirogami steel has a high carbon content and provides one of the sharpest cuts, but it is not stainless, so careful cleaning and drying after each use is required to prevent rust.
The handle of the knife is made of oak wood, a hard and durable wood that is resistant to continuous and harsh use, as well as contact with food and kitchen materials. The round shape of the handle makes the use of the knife comfortable and practical from every angle, offering ergonomics and absolute control during use. The handle is tightly and securely connected to the blade through a buffalo horn collar, offering a wonderful aesthetic touch to the knife.
