Knife Yanagi-Sashimi Shirogami F-1123 21cm Silver-Natural Tojiro

The Yanagi-Sashimi Shirogami Knife F-1123 is a fine example of Japanese tradition in the art of knife making, made to perform with absolute precision and highlight the quality of your kitchen. This knife, with its unique Shirogami (carbon steel) forged blade, combines traditional Japanese craftsmanship with exceptional functionality and elegance. The blade of the Yanagi-Sashimi F-1123 is made from Shirogami, one of the finest steel materials in Japanese knife art. It is a high quality carbon steel that has the ability to hold its sharpness for a long time while remaining easy to resharpen. This steel is ideal for fine and precise cutting, such as sashimi and sushi slices, where sharpness and cleanness of the cut are critical. The blade is forged using the traditional Kurouchi method, which gives the blade a rough and natural texture, combining traditional looks with practicality.
The blade features a single bevel with an ultra-precise hand-turned sharpened edge, which is ground to 15° to obtain the sharpest angle. This unique sharpening method makes the knife ideal for cutting fish and seafood into very thin and symmetrical slices. The single edge allows it to cut in one continuous motion, preserving the freshness and integrity of the ingredients without leaving food residue on the blade. The handle of the Yanagi-Sashimi F-1123 is made of magnolia wood, which is known for its water resistance and pleasant feel when in use. The round shape of the handle, combined with the warmth and texture of the wood, provides a firm and comfortable grip for excellent precision and ease of cutting. This handle is carefully crafted to provide excellent control and comfort in every movement, while the natural wood matches harmoniously with the metal finish of the blade. Shirogami steel, which is high in carbon, creates a blade that is extremely sharp and durable, but requires careful maintenance to prevent rust. So, after each use, it is important to clean and dry the knife thoroughly and maintain it with a little oil.
